Cello Chocolate, ol’ Republic Brewery pairing @Matteo’s Public

We wrote about beer and food pairings in our magazine’s current issue, including a link to a beer and food pairing chart. This is a growing trend.

Some people say lager is like white wine, and ale is like red. “When matching beer and food, the most important thing to look for is balance,” says Garrett Oliver, author of The Brewmaster’s Table. “We want the beer and food to engage in a lively dance, not a football tackle.”

More Sierra Foothills and Truckee-Tahoe restaurants and breweries are promoting craft brews with their food. Some are offering beermaker dinners, just like winemaker dinners.

This week we attended a food and beer pairing at Matteo’s Public (owned by Matt and Michelle Margulies) with beer from ol’ Republic Brewery (Simon Olney) and chocolate from Cello Chocolate (Ned and Debi Russell). All three businesses are based in Nevada City.

The dinner also was a good example of the local “food collaboration” that we wrote about this issue — a trend we predict will be one of the biggest of 2013. Farm-to-table was the original coupling of local farms and restaurants, going back to the founding of Alice Waters’ Chez Panisse restaurant in 1971.

We enjoyed the night immensely, visiting with some locals and meeting new couples, including one who recently moved to Nevada City from Tokyo.
