Nick Sensley guest chef at Dragonfly in Truckee

From running the town police department to advocating for global causes, the affable Town of Truckee Chief of Police Nick Sensley has yet another talent up his sleeve.

Sensley will connect with his New Orleans roots while whipping up Mardi-Gras style culinary creations when he takes to the Dragonfly kitchen as guest chef on Friday, Nov. 11.

This event coincides with Sensley’s very last day serving the town in his official role as Chief of Police. Sensley has resigned his position to work as a consultant with Humanity United, a global peace building organization based in Washington, D.C.

“I’m excited and honored to cap my final day serving the Town of Truckee, by literally serving up some fun, Cajun food to my friends, colleagues and townspeople that evening at Dragonfly,” said Sensley.

Born and raised in New Orleans, Sensley will dazzle diners with a menu that reflects a true “down home” theme. What follows is a sampling of the delectable Cajun-infused menu items that diners can enjoy:

Deconstructed Fried Oyster Po’ Boy with Caper Remulade Sauce
Crayfish Salad with Spicy Lemon Vinaigrette
Sensley’s Down Home Gumbo
Rum Raisin Bread Pudding

“Nick is going to be showing the pros in Dragonfly’s kitchen a thing or two about true New Orleans’ cookin’!” said chef and owner Billy McCullough.

Feast on the full Sensley prix fixe menu for $48 which includes an appetizer, salad, entrée and dessert. All Sensley guest chef menu items will be offered a la carte. Additionally, the full Dragonfly menu will also be available. Part of the evening’s proceeds will be donated to the worthy Sierra Senior Services organization.
