Newcastle Produce’s cooking classes are taught by Chelsea Federwitz, chef, pastry artist and graduate from the Culinary Institute of America at Greystone in St. Helena.:

March 14…Girls Night Out!…Kiss Me I`m Irish…7 p.m. $40 per person
Get your green garb on and grab the girls for another exciting GNO! A sit down gathering and dinner where recipes will be provided. We will be having Reuben Sliders, Braised Cabbage with Bacon, Guinness Corn Beef, and to top it off Irish Car Bomb Cupcakes! The menu will be paired with local wine and beers!

March 19…Artisanal Pasta…6:30 p.m. …$40 per person
Break out your dusty pasta maker and let`s get rolling! We will go step by step making pasta dough in this hands on class. Also, you will learn how to make flavored and different colored pastas. Each student will go home with wonderful handmade artisan pasta.

March 26…Springtime Scones…6:30 p.m. $45 per person
In this ever so popular class you will make your own two batches of scones to be baked during class or baked at home. We will use fruits that are in season and learn about the many flavor combinations you can create! Learn the secrets and techniques to make the perfect scone to pair with your cup of tea or to entertain your guests with!

April 8…Sauces…6:30 p.m. $40 per person
This class will feature some of my favorite sauces. We will first learn the basics of sauce making and learn ways you can changes the sauces to make them your own. In this demo class we will be making Hollandaise, Flavored Aioli, Bechamel, and a Tomato Sauce.

April 11…Live fire! Wok Cooking…6:30 pm $40 per person
This class is going to take stir fry to a whole new level! Dishes will be demonstrated on a local made custom outdoor wok. We will be making dishes with noodles, pork, chicken, and vegetables. A basic menu with great flavor focusing on simple ingredients and simple steps to create great dishes.

April 29…Tuesday Taco Night…6:30 p.m. $35 per person
Our first ever Taco Tuesday Night! This class will give you everything you need to know on how to set up your next taco night. To satisfy you taco cravings we will be making pulled pork with a sriracha slaw, dry rubbed salmon with a tropical salsa, and shredded citrus marinated chicken with a slaw. This is a demo/dinner class which will include a local beer tasting.

May 1…Tamales: All-You-Can-Roll: Chicken and Pork… 6:30 p.m. $45 per person
In this popular class you will roll as many tamales as you can to take home for your own fiesta. Learn how to make masa, fillings, wrapping, and steaming.

May 2…Girls Night Out! Fiesta Time!…7 p.m. $40 per person
Calling all the ladies! We will be starting out with Guacamole and Sangrias. Followed by shredded tequila-lime chicken tacos with a mango salsa and shredded brisket tacos with a chipotle slaw. To top the night off for dessert we will be having margarita cupcakes! This is a sit down gathering and dinner where recipes will be provided.

Private Classes are available. Please email Chelsea to make reservations. Book soon because dates fill up fast. Minimum of 10 guest and maximum of 16.

All evenings include recipes, training, shopping for ingredients, and menu planning. Please plan to arrive on time. Private cooking classes are available. Please make reservations two weeks ahead of time and with a minimum of 8 students. You can sign up for classes at Newcastle Produce www.newcastleproduce.com.

Class fees are non-refundable. If you are unable to attend a class, please let us know one week ahead and we can transfer you into another class. Classes may be canceled if there is insufficient enrollment. If this happens, we will contact you by phone one day before the class is scheduled. You will have the choice of transferring to another class or receiving a full refund.
